Hi,
For this u need to use BPM, you need to decide what is the condition to stop collecting. for this refer this bpmPatterns delivered from SAP. It will be in the SAP BASIS SOftware component.

Here in ur case, Multiple IDocs means, multiple IDocs of same Type or different multiple IDoc types ?

in SAP XI basis objects, there are tutorials on BPM as how to collect and split etc etc. go through them, you get lot of details on how to use BPM if you go through those examples.
