Is there a way to create a File Upload without displaying the InputField (which displays the name of the file chosen) ?

No. You cannot use a FileUpload control as such without displaying the inputfield.
Why do you want such a thing? Can you describe your requirement?

It's impossible to hide "InputField" part of file upload. Even in plain HTML.
Try to solve problem from other side: restrict length of characters in this input field and set fixed width for table column.

I don't think so.
I didn't try it, but I assume, if you set the FileUpload to invisible, the browse button will also be invisible and nobody can use the function behind.
But what's your use case?
The user has chosen the file, why should he not be able to see what he has done?
