Categories and Hierarchies can be build automatically in the Import Manager.
In your Source Hierarchy pane, once you marked a field, there's e.g an option (via context menu) to split field contents into a hierarchy. Afterwards a new field is created, which can be mapped then to a Desctination Hierarchy field.
Once you mapped hierarchy-fields to each other, there are as well special Value mapping options (again Context menu) for hierrachies available.
