tax data in mm01

hi all,

while creating a material master using mm01, in the view sales:sales org1 there is a tax data in which by default some values are generated.

for exp:

Country Country Tax Category Tax category Tax classification Material Tax classification

DE Germany MWST Output tax - -

now, what i don't understand is, from where these fields are updated. i mean why tax category 'MWST' why not any other ?

pls guide me....on this.
