Is there any way to edit the segments that get generated via IDOC_OUTPUT_STPPOD (Process Code: OPOD).?

You can use enhancement point ENHANCEMENT-POINT IDOC_OUTPUT_STPPOD_G2 SPOTS ES_SAPLV56K. in the FM IDOC_OUTPUT_STPPOD. The data is already collected in the segments and you can adjust it there.
