Are there any BEST PRACTICE documents on installing SQL Server and SAP databases on VMWare?
One more thing ... We are being told by our contractor that SAP does NOT support SQL Server on VMWare. I have NOT seen that stated anywhere. Is this true?

Installation Procedure is similar as in you do installation on physical host. I see nothing special for SQL Server.
However, in general, the VMWare and basis has to be aware of memory and other problems which may arise when SAP is installed in VMWare, no matter it is sql server or any other database.
Thanks

The SAP on VMware Best Practices is a good start. There are two other documents describing MS SQL on VMware:
Microsoft SQL Server and VMware Virtual Infrastructure
Performance and Scalability of Microsoft SQL Server® on VMware vSphere 4
