It depends, what kind of partner function you want change? If I understood what you want, you have to press F6 in sales order , and after click on change or press F5 to change the search term.
Here i wanted to know how to change any of the partner function's search term locally for a particular sales document (as search term is part of general data - address portion)
As you have suggested, that i have to make the changes in the customer master. But i want to change search term locally for a particular sales document
VA01 / VA02 don't have a field on the partner address screen where search term field (ADRC-SORT1, SORT2) in the partner address can be maintained.
However BAPI_SALESORDER_CHANGE does provide search term fields SORT1 and SORT2 in its interface in PARTNERADDRESSES. So I believe the search can be updated through this BAPI
