Hi,
Our SAP PI system is growing larger and larger with more critical interfaces being deployed. Maintaining the system is becoming a pain because if a restart is required we need to inform so may external entities.
A solution we have proposed is to have 2 PI Production servers with interfaces spread across both systems. So if a restart is required on one system then the other system can remain on the air.
Is this possible? And what is peoples views on doing something like this?

2 PI Production servers with interfaces spread across both systems. in this case if any time any of the server is restarted then in that case too you still have to inform external vendors...so i think this might not work for you.
you can have the another PI server which mirrors the primary PI server in case of down time/migration/restart you can switch to the secondary server which will not impact the interfaces and which avoid informing to external vendor.

If you have really big number of interfaces and your current PI production server not able to handle load then last option is adding one more production server.
If you want have multiple PI instances then cost and maintenance point of view customer has to invest it. You can have multiple non central adapter engines so that you can minimize the dependency and improves the performance.
What exactly you mean maintenance became difficult?

maybe we are running in the same issue like Gareth, in the future.

What means, you will have so many important Interfaces running during the whole day every minute, you aren't able to find any suittable maintenance window. From business you don't get maintenance window not longer as 15 min. and this is much to short for maintenance work around the whole SAP PI infrastructure (Support Packages, Database, Hardware, ...).
The original question is, how you are able to handle this maintenance scenario?
This is not an HA issue and a second application server is as well not an solution.
