It is not possible to have variant at transaction level (CNS0) because project deliveries are dynamic and keep change for each order and these are not static values. Even the system lets you to create varinat with whatever possible way, it will ignore other project paramaters. Moreover we can not restric those default parameters.
When you input Project defintion and click on button "components" which pop ups window with all the default values like shipping point, ship-to-party delivery type, sales org, distribution channel and division. I guess you have not customized your pop up window.
What you are entering here is planned goods movement date and any have that is required information when you are planning to move the goods out of your wharehouse.
I am not clear what data you wanted to default. Please clarify.
