I have a situation where there are different definitions for shelf life policies for each customer(like the different expiration dates).
How can this be configured?

Since the expiry date of stock is actually stored in the batch master, it's difficult to write logic (even if you customize the material master at the location-level) that is customer-specific with respect to shelf-life planning.
That being said, I've had a similar requirement to do a sell-down duration which varies by customer type. We used custom logic for the calculation, but essentially updated the batch master expiry for planning purposes using a custom table and logic we developed there.
I'm not aware of any standard way to customize sell-down or expiry logic at a customer-specific level.
