Hello
When ordering from online stores such as Amazon etc you receive an automatic email when you have placed your order, another one when it has been despatched and if something is out of stock you get another email when that item has been despatched aswell.
Is there a way of getting SAP to generate these emails and send them to customers for orders created on ZS01?

Yes I think this is some of what SAP CRM Internet sales suite offers.
Other option of doing it in SD is configure output to each of the document like Sales order, delivery, ASN etc..and configure them as 'External send' and relevant settings in SCOT for sending emails.
