Where do I get the details of the entries made in the Long text field- at Header level of Service Entry Sheet. Please help me with the Tables/fields

Long texts are not stored in tables, they are stored in structures. To get the long-text field you have to use the "Read Text" function module and use "Write Text" function module to add it to any report of enhancments. Contract your ABAP technical team, they will be able do this easily.

of course is long text stored in tables: header data in table STXH and item lines in STXL table.

Only you cannot read the text content with the table viewer SE16 (the key fields can be seen). instead you have to use function module READ_TEXT to see the text in readable form
