In CO02, go to functions tab and select deletion flag active and save the PO. Once you activate the deletion flag GI, release and operation confirmation will be deactivated.
I dont think so u can delete the .. sales order reference from the production order, but you can allocate and de-allocate the stock to the sales order through MB1B 411 E and 412 E Movement types. just check whether this fufills your requirement.
