Phasing out Mobile Sales as part of CRM 2007 to CRM 7.0 Upgrade

In 2009 we upgraded our CRM system from CRM 4.0 to CRM 2007. As part of that upgrade we also upgraded our mobile landscape (MSA, Workbench, MSM, AMT etc). Over the last number of years however we have phased out the use of our Mobile Sales application in favour of the Sales Web UI. We are now planning for an upgrade to CRM 7.0 EhP1. This might seem a strange question but what steps need to take place to phase out the mobile components to ensure our upgrade CRM 7.0 Ehp1 system works without issue.

Is there any documentation which details the steps to phase out the mobile applications from a CRM landscape. Can anyone share their experiences.
