I am running Windows 2k3 Enterprise Edition on a IA64 bit platform.
In the past I have done Windows 2000 in 32 bit and 2003 Enterprise in 32 bit. The main reason was to take advantage of being able to go above the 4 gig cap in RAM for the java engines. With 64 bit we do not have to worry about caps on memory though.
I have only worked with Windows so I can't give a comparison. Over all, if you are going to go Windows, go with a 64 bit platform. Java engines are a lot smoother running now.
