I have a sub assy that is manufactured in ME. It is listed as a component on the BOM of the parent assembly.
When a shop order is released for the parent assembly it generates SFCs for the parent AND creates a shop order for the sub assy and generates SFCs for it too.
How did this get set up and how do I undo it?
Are you asking about system rule "Create Subassys on Shop Order Release"?

No. Its quite old ME setting. Please find below its description:
true (default): Creates and releases subassembly shop orders when the system releases the parent shop order. The system determines the subassemblies to create based on the bill of material for the shop order.
false: Creates no subassembly shop orders when the system releases the parent shop order.
Can override at: Site, Item.
