Hello,
We have a scenario where we need to send a csv file full of data through to a third party customer. We were hoping to use PI as the middleware to convert the data from SAP into a CSV file. Does anyone know what we should be using in SAP E.G. IDOC, RFC etc. to distribute the data to PI?

if you need to extract the idoc daily from r/3 side means in r/3 side you need to job scheduling using T.code :SM37. and it will come to XI and covert to the CSV format using receiver file adapter.

You can extract IDoc from SAP and convert in to CSV file, using PI you can easily do it.

You have three options
1 Idocs
2 proxies
3 RFCs
now depending upon your business requirement lest say you have huge data and you need to select data ouot of few tables do some business transformations on them and the want to send to third party , you can go with proxies
If there is financial data or data which can be addressed by standard IDocs , you can go with IDocs
same is case with RFC's but RFC;s also you need to call in registerd server programs
So searcha ccording to what is your need , all scenarios alre availble on SDN
