My company is finally upgrading from IE6 to IE8.
Is there anything I should be concerned about with any transactions that might have issues displaying HTML data?

This depends on what kind of product from SAP which you are using. for example SAP Enterprise portal?
BW/BI/BEX report? .. and etc.
Now IE8 has been offically supported as a client browser, but regarding the server side product , there is a minimum requirement for the SPS levels. For instance, if you use BI7.0, then you need at least SPS21 to fully support IE8.
Hence I would like to suggest you check the PAM documentaion which is available here:
http://service.sap.com/pam -> select the product you are using, and go to the browser relevant page(s).

If you search for "IE 8" on marketplace you will get almost 25 notes, go through which are relevent to you.

One of the well known with IE 8 which has been fixed recently.
"sorry, your browser/program is not supported by Web Dynpro!"
Issue has been fixed with solution mentioned in SAP note 1347768.
Other notes may be helpful for IE 8 issues
