I have enabled change tracking option in console at Table and field level for add/modify/delete.
Please let me know where I can see the logs for the changes accomplished.

the easiest and best way to check change logs is the CHANGE TRACKER APPLICATION.
Once you set change tracking ON in MDM console, configure change tracker application by following steps mentioned in below link

You can also check in database table A2i_CM_History, but this is not recommended way...

You can only change the settings for the Change Tracking table for an MDM repository that is mounted and unloaded
A separate user interface is available for viewing change information tracked on this table. This interface can be viewed as a stand-alone application, as an iView, or it can be integrated into the MDM Data Manager
follow the below steps to configure change tracker
1.Create a data source for the relevant JDBC connector, (MS SQL, Oracle, Max DB, or DB2).
2.Import the Change Tracker application .sca file using the Software Deployment Manager (SDM):
3.Define the schema configuration file (only if necessary - for example, if the schema is different from the default structure).
4.Set up the MDMChange Tracker application depending on the use mode.
The MDM Change Tracker application can be run in three modes:
1.Standalone Mode
2.Incorporated into the Web tab of the MDM Data Manager
3.Use it as an iView in conjunction with standard MDMiViews on a portal page
Note: Enabling change tracking can dramatically degrade MDM system performance when records are modified.

See as per your console settings, everything happened at Database Level table A2i_CM_History so its up to you how do you want to see these record changes either through some Portal application for end user or at database level or through some other UI.

See figure 5 of this blog before data changes in Data Manager and the same data record in figure 9 of database.
Now when he make changes to record in figure 10 Data manager the same gets reflected into Database figure 11.
In fig 11 , please carefully see all the columns NewValue, OldValue, EventTime, FieldName, UserName etc.

Change tracking once enabled can be seen oonly via the change tracker view which needs to be deployed separately. Its a separate IView built in from SAP and needs to be deployed for viewing the changes, there are no separate logs.

The Change Tracking table is an MDM system table with a predefined set of fields, and records that are not directly visible in either the MDM Console or the MDM Client. Each record is created automatically by MDM when the value of any field that you are tracking is changed, providing an audit log of changes within the system.
A separate user interface is available for viewing change information tracked on this table.
