What is the use of +/- indicator and update document flow indicator in copy control at item level ?

In simple terms,
>use of +/- indicator
This is to determine what's going to happen to the source document when copying from another.
For example, From Quotation to Sales order you have a + effect.
Say Quotation has 100 units
Your copy control has + there
Then you create a sales order from that quotation for 70.
Now if you try to create another sales order from same Quotation, you can see only 30 is remaining. That's how + effects to quotation.
If you keep blank there.. next time when you try to create a sales order original quantity will remain as 100 always.
>update document flow indicator
This is to define whether to update the document flow or not.
If you set as blank, then you will not be able to see your document flow records in Environment -> Display Document Flow menu option
If you set it only you can see the documents under that menu.

The Update Document Flow indicator is used in order to maintain the document flow between the documents like Sales Order,Delivery,Billing...
Update indicator for flow table
Indicates whether the system creates a document flow record when you copy one sales document into another.
The flow record includes information about how much of the quantities and values in the source document have been copied into the target document.
If you leave this field blank, you cannot display the document flow later.
In the case of +/- Quantity,
Quantity is calculated positively, negatively or not at all Indicates whether, during copying, the quantity or value in the target document has a negative effect, positive effect, or no effect at all on the quantity still to be completed in the source document.
The system uses this indicator to determine how the quantity in the source document is affected. For example, if you
Create a quotation item for 100 pieces,
Copy the quotation into a sales order, and
Create a sales order item for 80 pieces,
the copying has a positive effect on the quotation. In effect, you have added 80 pieces to the quotation quantity that is now considered complete. 20 pieces in the quotation remain to be completed.
Example:
In sales documents, for example, you can expect the following results:
Quotation -> Sales order: positive
Contract -> Return: negative
Sales order -> Sales order: no effect
In billing documents, for example, you can expect the following results:
Delivery -> Invoice: positive
Delivery -> Cancellation: negative
