Hi,
We plan to patch our Production System to the latest SPS,
ERP SPS 12 to ERP SPS 16, and Netweaver SPS 16 to Netweaver SPS 20.
In order to plan for the regression testing required, we need to know what are all the changes/notes involved. Is there any way to extract the list of notes related to the patches?
Click in the information button beside each Support Package in SAP Marketplace and you'll see all the notes included.

Also, is there any way to find out the list of objects modified by SAP Patches?

That is true. However, it's very tedious to do the same for all the support packages required. That's over a hundred support packages.

That's true - and I seriously doubt you can all look at them and tell from reading them if they impact your production.
You can better generate a "side effect" report:
--> Side effects of SAP notes
This will give you a list of known issues after an SP implementation.
