Field Grouping in SAP

Hi i want to understand how the field grouping works. there is a scenario for us to make the Sold to party (Partner Function) to non Editable while Sale order processing. The same to be affected for VA02 as well.

provide with a detail configurations what follows what .

Thanks for the reply on the user exit . i want a solution on Fieldgrouping ? whether we can acheive this through Fieldgoruping . if so then please let me know the config details .

Objective is to make the address fields in display mode for partner functions

Apply exit V45A0002 where you can default Sold To Party to sale order and nobody can change this.
