What the process if a case exists where we must extend standard functionality offered in a SAP Bundled Service? Letu2019s assume the additional functionality impacts the input and output parameters. Is the approach to copy the service to Z_.... Services? How have other companiesu2019s done this?

Hi,
Valid approach is to copy it to new service and change that service. There is SOA developer handbook available on SDN where you can find this topic.
In my case I copy service to separate namespace and then proceed with change in input/output structure. In backed (ERP) create proxy and if possible call same class/BAPI or write your own code.
