Hi,
Setting is in:
SPRO > Logistics - General > Batch Management > Activate Automatic Batch determination in SD
(or BADI / user exit is in work)
http://help.sap.com/erp2005_ehp_04/helpdata/EN/25/283c9a4f7811d18a150000e816ae6e/frameset.htm
I you are asking what are batches:

If you set batch management for goods, those materials are managed in batches - it measn when a quantity is posted to stock / issued from stock you have to specify the batch number; you can see this in MMBE / MB52 (e.g.) System tries to determine the batches based on your setting when you are creating the SO.

The batch numbers are created in the system when you upload the stock of the materials by 561 movement type or through GRN 101.
Now these batches are then utilized in the sales order while issuing the materials to the customer
