We are planning a migration from Windows/Oracle to AIX/Oracle.
We are using the standard migration procedure based on r3load.
Is possibile to use an application server on AIX to export the database or is supported only the use of an application server of the source platform (Windows).

Theoretically, this might be possible. But what you would have to do is setup the AIX app server act as a dialog server to the system on the windows box. Is there a specific reason you would want to do that? Are you trying to decrease the export time by adding more app servers to the export process? It that case, it would be quite a bit simpler to just add another windows system app server.

From my point of view R3load exports DB in plattform independent format, therefore you can use any supported plattform (including AIX).
