I have one system which has collected 5 GB of data in /usr/sap/<SID>/data (even growing) and other with only 2Gb.

What could be the reason.Tcoll table?

Do you see stat.datXX, astat.dat, enqstat.dat these files?

Do you have different "reoorganization" period in st03n for 2 systems?

TCOLL table contains all the reports that is to be run for statistics collection? do you have same frequency for all the reports in both the systems?
