What values of PHYS_MEMSIZE and em/initial_size_MB do you recommend?

PHYS_MEMSIZE is only valid for Windows based system. use the RZ11 profile parameter documentation for this.
em/initial_size_MB:
Ensure that the pool is 10 to 15 times as big as ztta/roll_extension. The exact value depends on the available swap space and the number of users in the host system. if the entire number of users will not get the memory from extended memory, then they will run into PRIV mode very frequently.

I guess you stated 8 GB is your RAM. you also need to consider SWAP size along with RAM. depending on entire memory availability you will set the parameter.
after changing the parameters from SAP, you can run "sappfpar check pf=<instanceprofile>" from os level to check if your existing memory configuration allow you to use these parameter values or not.
