Upgrade from EBP 3.5 to 5.0

Hi I have this situation, described below. Does anyone now what could be a solution?

Old orders: 1) We need to be sure, that all users can view the history of orders which is still in process. 2)We need to be sure that the users still can use their historic templates. 3) We need to be sure, that orders, which is still under processing can be processed after the upgrade.

Standard config for positions was in BBPPU99 as a link - now this is an "area" which always is opened in BBPSC01/BBPSC03. This confusing for the users.If it is not possible to change this, is it then possible to compress the view?

BBPPU10 (Shop on Behalf) is no longer existing, but the functionality is in BBPSC01. Does this funtion exist as a independent transaction as it did in EBP 3.5?

Free texts is not to be found in BBPSC01, this makes it impossible to order non-catalog items for others - is that true?

Our existing rolls is as described further down. We have more of each, since they are separated depending of speding limit. Our rolls are not that different from SAP standard rolls. To minimice the confusion of the users, and only show exactly what they need and nothing else.
