Where does Sap store all the payloads? I need to search for a specific element is n inbound payload but there is thousands of messages.

Did you mean searching for a message, using payload content, in SAP XI?
If yes, you can use this:

The payloads are not stored in sap xi as it is.
The will be stored in RAW format which you cannot read , in SXMSPMAST
SXMSPMAST2 tables.
