Not aware of any specific course on CRM. You can follow general course on authorizations.

There are some documents on service.sap.com or help.sap.com

CRM Related authorizations:

- Master data:

Business partners

Product maintenance

- Business Transactions

Your own documents

Based on organizational level

Transaction category dependent

Transaction Type dependent

Sales Area/service org. dependent

Look for CRM Objects

CRM_ACT (authorization object CRM transaction - business transaction category activity)

CRM_CO_PU (authorization object CRM transaction - business transaction category purchase contract)

CRM_CO_SL (authorization object CRM transaction - business transaction category sales contract)

CRM_CO_SL (authorization object CRM transaction - business transaction category sales contract)

CRM_CO_SE (authorization object CRM transaction - business transaction category service contract)
