Is it possible to do a Async/Sync Bridge, given the following:
SAP Async call to PI 7.1, then a Sync call to a SOAP/HTTP receiver, then an Async call back to the original SAP system?
Can the Async call from SAP be a proxy?

If you could use proxies at both source and target, then why not configure a sync scenario instead of going for BPM. If this is not an option, then you have to use BPM.

this is a standard simple BPM - nothing special about it
so answering your question - yes you can do it - with proxies too
