If not using SSL then you can accomplish this very easily with a network packet scanner such as netmon or wirteshark. LDAP is in clear text so everything will show up. The CMS trace will capture a lot of info but not all.
If using SSL then I'm not sure. You may be able to add the cert to wireshark so it can decrypt the traffic if not then you will need to disable SSL to trace or just use the CMS logs.
