Where do we define which Item Categories are allowed for which purch doc.?

This is controlled through Document type.
In SPRO > Materials Management > Purchasing > Purchase Order > Define Document Types > Select your document type and click on allowed item category , there youc an see the allowed item category for a particular document ytpe.

We can't define new item category in SAP.You have to use the standard item category from SAP.
But Item category determination in PO is controlled thorough document type.
PLease find below the configuration path to do so:

we dont define own item categories, we only use the SAP given

check in Transaction OLME-->Define External Representation of Item Categories..

In this, select ur document type and click on allowed item categories folder on left side and here u can maintain ur item categories for document type..

Please go to transaction OLME, select your purchasing document for example PO -> Define Document Types -> mark the document type -> check the allowed item categories.
