From all my searching it doesn't look possible but I have to ask, is there any way to have an editable table with alternating row colors?
Nope. i dont think , only otherwise if any new feature has been added in the Enhancement Pack. i also searched a lot to get that beautifull look Alas!! is possible only for Read-Only tables

Yeah this is possible to have alternate colors in the table rows.
You can check the standard WDA Component - wdr_test_table.

It's not that simple. I'm talking about an editable ALV table. According to SAP, a table can only have alternating row colors when it is in read-only mode. I'm wondering if there is a way to do it with minimal coding or, if it is even at all possible. We have tried forcing it by using cl_wd_table_column=>e_cell_design but that didn't work.
