Those fields may or may not exist in Tables. As you surely know, much of the data in SCM is not stored in tables as it is in R/3. Further, those fields that do occur in tables can exist in multiple places.
To review tables & fields in SCM (and much more), use the standard information repository transaction SE84.

I am not sure if you have the technical names for all of these fields.
If not, you may go to SE11 and do an F4 on Data Elements and enter the text in Description field.
You can get the Field name and then you may do a where used on the field to get the relevant table.
Alternatively, if you are aware of a report which uses these fields - the report could be a source of information to get the technical fields.

I agree with DB. Not all the below fields may not be stored in tables. How ever you can try to find the relevant tables if you can get their technical names. Here is how it is:
Go to transaction se80, click on "Repository information system"
Drill down to ABAP dictionary>Fields>Table Fields
enter the field technical name and search execute. This brings in all the tables where your field is used.
