I need to know, in layman terms, that when a customer says he wants "PI interoperability", what is it that he is looking for?
Can someone please explain in brief in a couple of sentences?

Interoperability is the ability of two or more systems or system components to exchange information and to use the information that has been exchanged. SAP NetWeaver offers you interoperability openness, and extensibility in the areas of people-, information-, process- and application integration.

HI Cons,
PI Interoperability means " the ability of system to provide services to and accept services from other systems and to use the services so exchanged to enable them to operate effectively together".
So your client is expecting the features of PI while integrating different systems.

Hi,
PI interoperability means using PI as a middleware to send and receive messages from a SAP/Non-SAP system to a SAP system. So your client should have scenarios in which msgs need to flow in or out of SAP to third-party systems, so your client needs PI to do this msg sending.
