Hi,
in XMl we can use our own santax but ISO 20022 XML format we use only predifne santax that is approved by Registration Management Group (RMG), Registration Authority (RA) and the Standards Evaluation Groups (SEGs)

As it is answered above, In addition ISO 20022 XML is specifically used for financial industry with a common platform for the development of messages in a standardized XML syntax.
For conversion to ISO 20022 XML
Mostly I think you need to use the XML converter for this. But you may have one try with giving the file encoding parameter as ISO20022
