Answering your question in 3 parts
1) What are the components used in E-Sourcing
There are mainly 2 components in esourcing
Optimizer and the Contract generation webserver
The optimizer handles the Sourcing, category management, Spend analytics part
the Contract generation webserver handles the Conract lifecycle part
You can perform the following in the sourcing component
eRFx, Auctions, Bid awarding
In CLM you can do the end to end contract management process until finalisation of the contract.
Then you can oush the contract onto the backend as an outline agreement/contract
2) What types of procurement does E-Sourcing support
SAP E-Sourcing is a sourcing application and cannot handle procurement
It sits on the procurement applications from whih the demand flows into SAP E-sourcing
The CPPR functionality in SAP ECC 6.0 EhP4, allows you to group the purchase requisitions and push it into the RFx to create sourcing events, you can then convert the RFx to an auction in a single click
3) what deployment scenario
There are 2 deployment scenarios
a) On-demand (standard deployment)
This is also called SAP hosted, where SAP will host the application and you need to pay SAP based on the usage of the system, you need not install the software in your environment.

b) On-premise
You install SAP E-sourcing On premise in your environment and use it.

in the left hand corner you will see SAP E-Sourcing 5.x

RFx'a are offine bidding processes when compared to Auctions
Auction is an online event where all the suppliers present their bids in real time, based on the auction type, for example a reverse auction, the lowest bidder wins the bid
There is lots to know about RFx, you can check this in the documents that you can download from the market place in the link that I have mentioned below
Also if you download the software from SWDC, you will get all the guides there
The Contract and Ctegory management functionalities of E-sourcing have been extracted to form XCLM, they are the same.
