In which table we can find the summary of Open Order Quantity for a material.

Check in VBEP table the open order qty or in VA05 also you can check the open order qty that has to be delivered

if the materials are relevant for statistics and the materials will be updated, then you can use the infostructure S004.

Here you can select with the material and you will get the open order quantities.
