If you are not using any useexits or other enhancements, the system date will be defaulted to the document date. This is a standard SAP behaviour. As GSL explained, you may think of greying out the filed if you want to restrict the usera from changing the same.

By default, the created on date (VBAK-ERDAT) will always be system date. The document date (VBAK-AUDAT) will be in change mode in the sale order and will take the system date by default. If you dont want the user to change the date, grey out the field either by using transaction variant SHD0 or user exit.

Hi there,
Check in MV45AFZZ, save user exit what date the system is saving the sales doc. It should be SY-DATUM.
VBAK-ERDAT will always be date on which you created the date.
