Good Day;
This may sound like an odd question, but it is Friday.
I am trying to find the IMG to update the Category list. This field is the second dropdown list on the initial page for creating a change request.

1) SAP Solution Manager -> Configuration -> Scenario-Specific Settings -> Service Desk -> Service Desk -> Maintain Categories and Priorities -> Maintain Categories (CRM_AKT_001)
2) Customer Relationship Management -> Transactions -> Settings for Activities -> Maintain Categories, Goals, and Priorities -> Assign Categories to Transaction Types (CRMV_ACT_CAT_ASS)

Yes, you can, but so you take a risk.
Better: use the second IMG activity to join only selected activities to your transaction type. The other activities become invisible, this is like deletion but doesn't disturb other codings.
More better: use an own transaction type Z* and customize the categories as told before
