Is there a way to view the SQL that gets generated by an infoset? Even better, could that SQL be modified directly?

yes you can display the SQL.
when you do display data, there is a check box for Display SQL query. check it and u will be able to see it.
No you can;t change the SQL - but yes you can influence it via the Query and obviously the joins
You can see it in RSRT against a query - the sql will get generated at run time
The button on the rsrt properies - include structure elements also has an effect on the SQL as well
