Can we find out what are changes(insert/update/deleted) in R/3 data for LO Structure (by using any tabel/tcodes) for last 2 days

Yes you can find out you can check the tables :
CDHDR and CDPOS.
Both are large tables make sure you give enough conditions else it will go to time out dump.
