Hi Christy,
no, SAP does not directly leverage these functions.
But none the less, it is up to you to use these on your system. I regulary use the snapshot functionality when applying Support Packages. In case somehing goes wrong a snapshot is the easiest way to roll back the import process (not exactly the best choice when talking about production and users keep on working while importing).

I do not believe so, at least I have not seen any whitepapers on it or seen it put to use.
Clustering and High Availabilty on the other hand...
What exactly would you use it for? Snapshots, log shipping, etc are useful for setting up a DR site, but most companies I have worked with are moving toward Clusters/HA for Disaster Recovery.
