Hello,
I have some item categories that I do not want to copy from sales order to delivery.
Is it possible with standard SAP to not copy item category from sales order to delivery?

Instead of removing the item categories from copy control, better way of doing this is to uncheck the checkbox Item relevance for delivery in the schedule line. For the item categories which you dont want to be copied into delivery, trigger a new schedule line category and remove the relevance for delivery.

Yes it is possible... Follow this:
IMG - Logistics Execution - Shipping - Copying Control - Specify Copy Control for Deliveries (T-Code - VTLA)
Select line item with your Source Sales Doc type & Target Delivery Doc Type & double click on Item on right side.
Now remove the Item Caterories that you dont wat to Copy from Sales Order to Delivery from the list.
This would solve the issue.
