to add to what has already been said there are some industries where it is very difficult to determine exact delivery qty even though order qty is defined.
Take the case of cables. A roll may be supposed to contain 1000 m but actual rolls measured will contain 998, 1001... and so on. So it depends on the buyer and the seller what they should accept and bill. It is for this that overdelivery and underdelivery tolerances are maintained.
Industries normally fix these norms when accepting deliveries but use the actual GR qty when the qty is less and PO qty when the qty is more in billing. This is sometimes of benefit to the buyer. In practice the seller also adjusts his prices for such anomalies. It also ensures that there is a Quality system in place to ensure that one does not lose.

Delivery priority---- How u wants to deliver the materials for that particular customer.
u can create ur own Delivery priority..
Let say for some customers( elite) u r maintaining high priority since they need the material as quick as possible.
Under Delivery Tolerence limit - - When u delivered less qnty then the actual order qnty then may or may not ur customer will accept . U can maintain Under Delivery Tolerance for ur customer in % basis so that upto that % less delivery he can accept.
Over Delivery Tolerance limit ---same as the under Delivery tolerance but in reverse way means u can fix it in % basis for ur customer. u can delivermore qty then the actual order quntity

Hi,
Delivery priority is basically used to priorities your delivery processing.
Delivery priority flows from you customer master record or you can also enter it in your sales order.
Further when you have number of sales order to be processed for deliveries in batch mode, then thius delivery priority will be responsible as to which orders are to be processsed first
Eg: 01 will be processed before 02
Under & over delivery tolerance: These are nothing but percentages of the order quantity above or below which the delivery will be / will not be possible.
Even these are maintained in your customer master record & flow into sales order.
