I am trying to find some type of document which describes adding/removing fields from the CIF process b/t R/3 and APO. Any ideas?

You can use enhance user exit CIFMAT01 ( Function Module : EXIT_SAPLCMAT_001) via SMOD tcode for adding or restirict Product Location master data fields transfer from R3 to APO.
