There is a book called SAP for Retail published by SAP Press itself. you can find it in this link.

There is also a book called SAP Retail information system, which has the functionalities covered quite comprehensively.. If you are in India try A1books.co.in you will find this book. This is also available in google books for online reference.

But the best way to learn SAP Retail is to play around with the system and try out different scenarios. As mentioned above the IRT series are quite a handful. You can also try using the best practices configuration and building scenarios using SAP buisness process blue prints based on these best practices. They are all publishe online.
